When the Winter winds are blowing or the snow outside is dumping (as it is here), it is time for some Baked Oatmeal.
I love any recipe I can stir up the night before and pop in the oven the next morning and Baked Oatmeal fits the bill. It is a very forgiving and adaptable recipe and you don’t have to stand around and stir the pot to make sure the oatmeal doesn’t burn. Enjoy!
3 cups of rolled oats
2 cups milk (dairy, nut or coconut milk)
1 Tbs. vinegar, lemon juice, or yogurt (the acid helps break down enzymes…if you can presoak these three ingredients for several hours it helps with digestion).
Add in
1/2 cup of butter or coconut oil
2 eggs
2 tsp. baking powder
1 tsp salt
1 Tbsp. brown sugar
spices to taste; Cinnamon, nutmeg, chopped fruit etc.)
Pour into a 9×13 greased pan. Bake at 350 for about 30 minutes. Serve with maple syrup, honey or any sweetener.

Sounds like a perfect dish for my husband’s running group to have after their long runs on Saturdays. I think I’ll try it the next time he hosts.

You can add all sorts of healthy additions like peanut butter or pecans if you want to be sure it is higher protein. It makes the house smell wonderful and is very pretty with berries on it (blueberries or chopped cranberries and a bit of sugar).

I forgot about baked oatmeal too…it took 8 inches of snow to remind me of that hearty breakfast recipe…plus I am gluten free now along with Hannah so I am trying to come up with those kinds of options.
